Description

Pie:

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Topping:

  • 1 1/2 cups whipped cream
  • Chocolate shavings or curls (optional, for garnish)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth. Cook over medium heat, whisking constantly until mixture thickens and bubbles. Reduce heat to low and cook for 1–2 more minutes. Remove from heat.

  3. Slowly whisk about 1/2 cup of the hot mixture into the beaten egg yolks to temper them.
  4. Gradually whisk egg yolk mixture back into the saucepan. Return to medium heat and cook for 2 more minutes, stirring constantly until thick and glossy. Remove from heat and stir in butter and vanilla until smooth.

  5. Pour the filling into the pre-baked pie crust and smooth the top.
  6. Press plastic wrap directly onto the surface of the filling. Chill in the refrigerator for at least 4 hours or until fully set.

  7. Before serving, top with whipped cream and garnish with chocolate shavings if desired.

Notes

  • For a deeper flavor, use dark cocoa powder or add a splash of espresso.
  • You can make the pie a day in advance and top with whipped cream just before serving.
