Description

This One-Pot Chicken Parmesan Pasta is a delicious and easy weeknight dinner that combines tender chicken, pasta, marinara sauce, and gooey cheese in one skillet. With simple ingredients and minimal cleanup, it’s a perfect meal for busy evenings.

  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 3 cloves garlic (minced)
  • 2 cups marinara sauce
  • 2 1/2 cups chicken broth
  • 8 oz uncooked penne or rotini pasta
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil or parsley (optional for garnish)


Instructions

  1. Heat the olive oil: In a large deep skillet or Dutch oven, heat the olive oil over medium-high heat.
  2. Cook the chicken: Season the chicken with salt and pepper, then add it to the skillet. Cook until browned and nearly cooked through.
  3. Add garlic and sauce: Add minced garlic, then stir in marinara sauce, chicken broth, pasta, Italian seasoning, and red pepper flakes if using.
  4. Simmer: Bring to a boil, then simmer covered for 12–15 minutes until pasta is tender.
  5. Add cheese: Stir in half the mozzarella and Parmesan. Top with remaining cheese, cover, and let melt.
  6. Garnish and serve: Garnish with basil or parsley before serving.

Notes

  • Use your favorite marinara sauce for convenience.
  • For a crispy top, transfer to a baking dish, add cheese, and broil briefly.
