- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
- Salt and pepper to taste
- 3 cloves garlic (minced)
- 2 cups marinara sauce
- 2 1/2 cups chicken broth
- 8 oz uncooked penne or rotini pasta
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil or parsley (optional for garnish)
Instructions
- Heat the olive oil: In a large deep skillet or Dutch oven, heat the olive oil over medium-high heat.
- Cook the chicken: Season the chicken with salt and pepper, then add it to the skillet. Cook until browned and nearly cooked through.
- Add garlic and sauce: Add minced garlic, then stir in marinara sauce, chicken broth, pasta, Italian seasoning, and red pepper flakes if using.
- Simmer: Bring to a boil, then simmer covered for 12–15 minutes until pasta is tender.
- Add cheese: Stir in half the mozzarella and Parmesan. Top with remaining cheese, cover, and let melt.
- Garnish and serve: Garnish with basil or parsley before serving.
Notes
- Use your favorite marinara sauce for convenience.
- For a crispy top, transfer to a baking dish, add cheese, and broil briefly.
