Scale
Vegetables
- 2 bunches asparagus (ends trimmed)
Coating
- ½ cup gluten-free flour (1-to-1 blend)
- 2 large eggs
- 1 Tbsp milk (almond milk or soy milk)
- 1 Tbsp olive oil
- ½ cup grated Parmesan cheese
- ¾ cup gluten-free Panko bread crumbs
- ¾ tsp salt
- ¼ tsp pepper
- ¼ tsp paprika
For garnish (optional)
- Parsley
- Grated Parmesan cheese
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the asparagus fries.
- Prepare Coating Bowls: Set up three separate large bowls or pans to accommodate the length of the asparagus spears for the coating process.
- Flour Bowl: Place the gluten-free flour blend into the first bowl. This will be the initial dry coating for the asparagus.
- Egg Wash: In the second bowl, whisk together the eggs, almond or soy milk, and olive oil to create a binding liquid mixture.
- Breadcrumb Mixture: Combine the grated Parmesan cheese, gluten-free Panko bread crumbs, salt, pepper, and paprika in the third bowl, mixing well to ensure even seasoning.
- Coating the Asparagus: Working with 4-5 asparagus spears at a time, first dip them into the gluten-free flour, then into the egg wash, and finally coat them in the Parmesan and breadcrumb mixture. Repeat until all asparagus are coated.
- Arrange for Baking: Line two large baking sheets with parchment paper and evenly space out the coated asparagus spears on the sheets to avoid overcrowding and ensure even crisping.
- Spray and Bake: Lightly spritz the asparagus spears with butter or coconut-flavored non-stick cooking spray to promote browning. Bake in the preheated oven for 12-14 minutes.
- Flip Halfway: At the halfway point of baking, carefully flip the asparagus spears to ensure both sides become golden brown and crispy. Return to the oven to finish baking.
- Garnish and Serve: Once baked to a golden brown, sprinkle the asparagus fries with additional grated Parmesan cheese and fresh parsley if desired. Serve immediately for the best texture and flavor.
