Ingredients
Scale
Fish
- 4 cod fillets (about 6 ounces each)
Crust Mixture
- 1/2 cup grated Parmesan cheese
- 1/4 cup seasoned breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons fresh parsley, chopped
Other Ingredients
- 2 tablespoons olive oil
- Lemon wedges, for serving
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Prepare Crust Mixture: In a small bowl, combine the grated Parmesan cheese, seasoned breadcrumbs, garlic powder, paprika, black pepper, salt, and chopped fresh parsley. Mix thoroughly to evenly distribute the flavors.
- Prepare Cod Fillets: Pat the cod fillets dry with paper towels to remove excess moisture. Place them evenly spaced on the prepared baking sheet.
- Apply Olive Oil: Brush the tops of each cod fillet generously with olive oil. This will help the crust adhere and brown nicely during baking.
- Add Parmesan Crust: Sprinkle the Parmesan breadcrumb mixture generously over the top of each fillet, pressing lightly to ensure it sticks well.
- Bake: Place the baking sheet in the preheated oven and bake for 12–15 minutes, or until the fish flakes easily with a fork and the Parmesan crust is golden brown and crispy.
- Serve: Remove from the oven and serve warm with fresh lemon wedges to squeeze over the top for a bright, fresh finish.
Notes
- You can substitute cod with haddock or halibut if desired.
- For a gluten-free version, use almond flour or gluten-free breadcrumbs instead of seasoned breadcrumbs.
- Serve this dish alongside roasted vegetables or a light salad for a well-rounded meal.
