Description

This Parmesan Crusted Cod recipe features tender cod fillets baked to golden perfection with a flavorful, crispy Parmesan and breadcrumb crust. It’s a quick and simple main course that pairs perfectly with lemon wedges and makes for a healthy, delicious seafood dinner.

Ingredients

Scale

Fish

  • 4 cod fillets (about 6 ounces each)

Crust Mixture

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup seasoned breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, chopped

Other Ingredients

  • 2 tablespoons olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Prepare Crust Mixture: In a small bowl, combine the grated Parmesan cheese, seasoned breadcrumbs, garlic powder, paprika, black pepper, salt, and chopped fresh parsley. Mix thoroughly to evenly distribute the flavors.
  3. Prepare Cod Fillets: Pat the cod fillets dry with paper towels to remove excess moisture. Place them evenly spaced on the prepared baking sheet.
  4. Apply Olive Oil: Brush the tops of each cod fillet generously with olive oil. This will help the crust adhere and brown nicely during baking.
  5. Add Parmesan Crust: Sprinkle the Parmesan breadcrumb mixture generously over the top of each fillet, pressing lightly to ensure it sticks well.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12–15 minutes, or until the fish flakes easily with a fork and the Parmesan crust is golden brown and crispy.
  7. Serve: Remove from the oven and serve warm with fresh lemon wedges to squeeze over the top for a bright, fresh finish.

Notes

  • You can substitute cod with haddock or halibut if desired.
  • For a gluten-free version, use almond flour or gluten-free breadcrumbs instead of seasoned breadcrumbs.
  • Serve this dish alongside roasted vegetables or a light salad for a well-rounded meal.
