Description

These Parmesan Roasted Carrot Fries are a delightful twist on traditional fries. Crispy, flavorful, and easy to make, they are a perfect side dish that will have everyone reaching for seconds.

Ingredients

Scale

Carrot Fries:

  • 1 ½ pounds carrots (peeled and cut into fry-sized sticks)
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Toss Carrots: In a large bowl, toss the carrot sticks with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Roast Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 15 minutes, then remove from the oven and sprinkle the Parmesan cheese evenly over the carrots.
  4. Finish Roasting: Return to the oven and roast for another 10–15 minutes, or until the carrots are tender and golden on the edges.
  5. Garnish and Serve: Garnish with chopped parsley if desired, and serve warm.

Notes

  • For extra crispiness, broil the fries for the last 2–3 minutes of cooking.
  • These pair well with a garlic aioli or ranch dipping sauce.
  • You can also use rainbow carrots for a colorful twist.
