Carrot Fries:
- 1 ½ pounds carrots (peeled and cut into fry-sized sticks)
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
Garnish:
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Toss Carrots: In a large bowl, toss the carrot sticks with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Roast Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 15 minutes, then remove from the oven and sprinkle the Parmesan cheese evenly over the carrots.
- Finish Roasting: Return to the oven and roast for another 10–15 minutes, or until the carrots are tender and golden on the edges.
- Garnish and Serve: Garnish with chopped parsley if desired, and serve warm.
Notes
- For extra crispiness, broil the fries for the last 2–3 minutes of cooking.
- These pair well with a garlic aioli or ranch dipping sauce.
- You can also use rainbow carrots for a colorful twist.
