  • 4 tablespoons orange juice (60ml)
  • 1/3 cup white sugar (70g)

  • Pinch of salt
  • Pinch of ground vanilla (or seeds from 1/2 pod)
  • Two dashes of lemon juice

  1. Combine Ingredients: Add all the ingredients—peeled peaches, chopped shallot, white wine vinegar, orange juice, white sugar, ground turmeric, salt, vanilla, and lemon juice—into a small pot.
  2. Boil and Simmer: Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to medium-low and let it simmer gently for 20-25 minutes, stirring occasionally, until the chutney thickens and achieves a creamy consistency.
  3. Cool and Store: Remove the pot from heat and allow the chutney to cool to room temperature. Transfer it to a clean container and store it in the refrigerator for up to two days to maintain its freshness and flavor.
