  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 can (15 oz) sliced peaches in juice, drained and chopped
  • 1 tablespoon cornstarch
  • whipped cream for topping (optional)

Instructions

  1. Preheat oven and prepare the pan: Preheat oven to 325°F. Line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake.
  3. Prepare the filling: Beat cream cheese and sugar until smooth. Add eggs, one at a time, then mix in vanilla and sour cream.
  4. Combine peaches: Toss chopped peaches with cornstarch and fold into the cream cheese mixture.
  5. Bake: Pour filling over crust and bake until set.
  6. Chill and serve: Cool, then refrigerate for at least 3 hours. Cut into bars and top with whipped cream if desired.
