Protein & Rice
- 1 pound of sausage (mild or spicy, depending on preference)
- 1 cup of long-grain white rice
Vegetables & Aromatics
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas
- Fresh parsley, chopped (for garnish)
Liquids & Seasonings
- 2 cups of chicken broth
- 1 can (14.5 ounces) of diced tomatoes, undrained
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of salt
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until the vegetables are soft, about 3-4 minutes.
- Add Garlic: Add the minced garlic and cook for another minute until fragrant.
- Cook Sausage: Remove the sausage from its casing if needed and add it to the skillet. Break the sausage into smaller pieces with a spatula and cook until browned and cooked through, about 5-7 minutes.
- Drain Excess Fat: Drain any excess fat from the skillet to reduce greasiness.
- Add Rice: Add the rice to the skillet and stir well to coat it with the remaining oil and sausage mixture.
- Add Liquids and Spices: Pour in the chicken broth and diced tomatoes with their juice. Add paprika, black pepper, salt, and red pepper flakes (if using), then stir to combine everything evenly.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 18-20 minutes, or until the rice is tender and most of the liquid is absorbed.
- Add Peas: Stir in the frozen peas and cook for another 3-4 minutes until they are heated through.
- Finish: Remove the skillet from heat once everything is hot and well combined.
- Garnish and Serve: Garnish with freshly chopped parsley before serving. Serve hot and enjoy!
