Description

This hearty Sausage and Rice Skillet recipe combines savory sausage, tender rice, and vibrant vegetables cooked together in one pan for a flavorful, easy-to-make meal perfect for any weeknight dinner.

  • 1 pound of sausage (mild or spicy, depending on preference)
  • 1 cup of long-grain white rice

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas
  • Fresh parsley, chopped (for garnish)

Liquids & Seasonings

  • 2 cups of chicken broth
  • 1 can (14.5 ounces) of diced tomatoes, undrained
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of red pepper flakes (optional)


Instructions

  1. Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until the vegetables are soft, about 3-4 minutes.
  2. Add Garlic: Add the minced garlic and cook for another minute until fragrant.
  3. Cook Sausage: Remove the sausage from its casing if needed and add it to the skillet. Break the sausage into smaller pieces with a spatula and cook until browned and cooked through, about 5-7 minutes.
  4. Drain Excess Fat: Drain any excess fat from the skillet to reduce greasiness.
  5. Add Rice: Add the rice to the skillet and stir well to coat it with the remaining oil and sausage mixture.
  6. Add Liquids and Spices: Pour in the chicken broth and diced tomatoes with their juice. Add paprika, black pepper, salt, and red pepper flakes (if using), then stir to combine everything evenly.
  7. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 18-20 minutes, or until the rice is tender and most of the liquid is absorbed.
  8. Add Peas: Stir in the frozen peas and cook for another 3-4 minutes until they are heated through.
