- 2 x 10oz (300g) sirloin beef steaks, approximately 2.5 cm (1 inch) thick
- 2 tbsp vegetable oil (or canola), divided
- Salt and pepper, to taste

- 1 red bell pepper (capsicum), deseeded, halved, and sliced into strips

Instructions
- Bring Steak to Room Temperature: Remove the steaks from the refrigerator and allow them to come to room temperature before cooking. This can take about 30 minutes in warm conditions or up to an hour if it is cooler, ensuring even cooking.
- Season the Steaks: Just before cooking, season both sides of the steaks generously with salt and freshly ground black pepper to enhance flavor.
- Heat the Oil: Place 1 tablespoon of vegetable oil in a heavy-based frying pan and heat over high heat until the oil begins to smoke slightly, indicating it’s hot enough for searing.
- Cook the Steaks: Add the steaks to the hot pan and cook for 2 minutes on each side to achieve a medium-rare doneness. Adjust cooking times for your preferred level of doneness.
- Rest the Steaks: Remove the steaks from the pan and place them on a plate. Loosely cover with foil (do not wrap tightly) and let them rest for 5 to 10 minutes to allow juices to redistribute.
- Cook the Bell Peppers: Return the frying pan to the stove over medium-high heat, add the remaining 1 tablespoon of oil, then add the sliced bell pepper. Cook, stirring occasionally, until the peppers are nicely charred and tender. Remove from heat.
- Serve: Arrange the rested steaks on plates topped with the charred bell peppers. Serve alongside fresh pesto and soft flatbread for a complete meal.
