Ingredients:
- 1 1/2 pounds boneless skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 1 (15-ounce) can black beans (drained and rinsed)
- 1 (15-ounce) can corn (drained)
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1 cup salsa
- 1 cup low-sodium chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar or Mexican blend cheese
- Chopped fresh cilantro and lime wedges for garnish
Instructions
- Place chicken in slow cooker: Put chicken breasts in the slow cooker.
- Add ingredients: Top with black beans, corn, diced tomatoes with green chilies, salsa, chicken broth, and seasonings.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Shred chicken: Remove chicken, shred, add rice, return chicken to slow cooker.
- Finish cooking: Cook on high for 25–30 minutes until rice is tender.
- Finish and serve: Stir in cheese, garnish with cilantro and lime.

- You can use brown rice, but it will require a longer cook time and additional liquid.
- For extra heat, add diced jalapeños or a pinch of cayenne pepper.
