Description

This Slow Cooker Fiesta Chicken and Rice recipe is a delicious and easy one-pot meal that is bursting with flavor. Tender chicken, black beans, corn, and rice are cooked together with salsa and spices for a satisfying dish the whole family will love.

Ingredients:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 (15-ounce) can corn (drained)
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 cup salsa
  • 1 cup low-sodium chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • Chopped fresh cilantro and lime wedges for garnish


Instructions

  1. Place chicken in slow cooker: Put chicken breasts in the slow cooker.
  2. Add ingredients: Top with black beans, corn, diced tomatoes with green chilies, salsa, chicken broth, and seasonings.
  3. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  4. Shred chicken: Remove chicken, shred, add rice, return chicken to slow cooker.
  5. Finish cooking: Cook on high for 25–30 minutes until rice is tender.
  6. Finish and serve: Stir in cheese, garnish with cilantro and lime.

Notes

Notes:

  • You can use brown rice, but it will require a longer cook time and additional liquid.
  • For extra heat, add diced jalapeños or a pinch of cayenne pepper.
