Instructions
- Prepare Ingredients: Wash and dice the red potatoes, leaving the skin on for texture. Cut boneless, skinless chicken breasts into bite-sized pieces.
- Season Potatoes: In a large bowl, toss diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until well coated.
- Grease Slow Cooker: Lightly spray the inside of your slow cooker with cooking spray to prevent sticking.
- First Layer: Place half of the seasoned potatoes evenly at the bottom of the slow cooker.
- Add Chicken and Cheese: Top the potatoes with half of the chicken pieces followed by half of the shredded cheddar and mozzarella cheeses and half of the crumbled bacon.
- Repeat Layers: Add the remaining potatoes, chicken, cheeses, and bacon in layers to the slow cooker.
- Add Broth: Pour the chicken broth evenly over the layered ingredients in the slow cooker.
- Cook: Cover and cook on low heat for 6-8 hours until potatoes are tender and chicken is thoroughly cooked.
- Rest: Once cooking is complete, switch off the slow cooker and let the casserole sit for 10 minutes to set.
- Garnish and Serve: Sprinkle chopped green onions on top and serve warm. Optionally, add dollops of sour cream or drizzle ranch dressing to enhance flavor.
Notes
- For best results, use red potatoes with skin left on for extra texture and nutrients.
- Cooking times may vary depending on your slow cooker model — check tenderness of potatoes and doneness of chicken before serving.
- Leftovers can be refrigerated and reheated for easy next-day meals.
- Optional sour cream or ranch dressing adds creaminess and flavor contrast.
- Ensure bacon is cooked in advance and crumbled before layering.
