Combining the classic flavors of graham crackers, chocolate frosting, marshmallow creme, and creamy ice cream, these sandwiches create a delightful frozen dessert perfect for warm days or anytime you crave a sweet, nostalgic snack.
Ingredients
Scale
Graham Crackers
- 12 graham cracker sheets (186 grams total, each split into 2 squares, yields 24 squares)
Frostings and Cream
- 16 ounces chocolate frosting
- 7 ounces marshmallow creme
Ice Cream
- 1 pint ice cream (473 grams, chocolate or vanilla flavor)
Instructions
- Prepare the Graham Crackers: Lay the 24 graham cracker squares face down on a large baking sheet, arranging them so you have an even surface to work with.
- Apply Frostings: Spread 1 tablespoon of chocolate frosting onto 12 of the graham cracker squares. On the remaining 12 squares, spread 1 tablespoon of marshmallow creme each.
- Prepare the Ice Cream: Remove any cardboard sleeve from the ice cream container to fully expose the block of ice cream inside.
- Slice the Ice Cream: Using a large knife, carefully cut the ice cream lengthwise into thirds. Then, cut each third in half to create 6 ice cream squares. Trim any uneven edges if needed, and enjoy any excess ice cream on the side.
- Assemble the Sandwiches: Place each ice cream square onto a graham cracker spread with chocolate frosting. Then, take a marshmallow creme-covered graham cracker square and press it face down onto the ice cream to form a sandwich.
- Freeze the Sandwiches: Immediately place the assembled sandwiches in the freezer for at least 4 hours or until the ice cream is completely firm and set.
- Store Properly: Once fully set, individually wrap each sandwich in foil. Then, place the wrapped sandwiches inside a freezer-safe Ziplock bag, and for extra protection, place that bag inside a second Ziplock bag before returning them to the freezer.
Notes
- Choose your favorite ice cream flavor—chocolate or vanilla works best with these flavors.
- For easier spreading, ensure the chocolate frosting and marshmallow creme are at room temperature.
- Allow extra time for freezing if your freezer temperature is higher.
- To serve, let the sandwiches sit at room temperature for a couple of minutes to soften slightly before eating.
- Foil wrapping helps prevent freezer burn and preserves freshness.
