Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 1½ cups powdered sugar
- ½ teaspoon vanilla extract
- 1–2 teaspoons milk (as needed for consistency)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- Prepare cookie dough: In a large bowl, cream butter with granulated sugar and brown sugar. Add pumpkin, egg, and vanilla. Gradually add dry ingredients and mix until just combined.
- Bake cookies: Drop dough onto baking sheets and bake for 12-15 minutes until set and golden.
- Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk as needed for consistency.
