Ingredients
Scale
Dough Ingredients
- 3/4 cup warm water
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1 tablespoon olive oil
- 1/2 cup sourdough discard
- 2 1/4 cups all-purpose flour
Topping Ingredients
- 2 tablespoons melted butter
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic salt
- 1 teaspoon garlic powder
- 1 teaspoon mixed dried herbs (such as oregano or Italian seasoning)
Instructions
- Activate Yeast: In a stand mixer bowl, combine the warm water, active dry yeast, and sugar. Let the mixture sit for about 5 minutes until it becomes foamy, indicating the yeast is active.
- Mix Dough: Add garlic salt, olive oil, and sourdough discard to the yeast mixture. Gradually add the all-purpose flour while mixing with the dough hook attachment until the dough is smooth and elastic.
- First Rise: Transfer the dough to a greased bowl. Cover with plastic wrap and place in a warm area. Let it rise for about 20 minutes until it has slightly increased in size.
- Shape Dough: On a floured surface, roll out the dough into a large rectangle. Transfer this rectangle to a greased baking sheet, spreading it evenly.
- Add Toppings: Brush the dough with melted butter, then evenly sprinkle garlic powder, dried herbs, shredded mozzarella, and grated parmesan cheese over the surface.
- Second Rise: Allow the dough on the baking sheet to rise again for 15 minutes while you preheat your oven to 400°F (204°C).
- Bake: Place the baking sheet on the lowest oven rack and bake the breadsticks for 15-20 minutes until they turn golden brown and the cheese is melted and crispy.
- Serve: Remove from the oven, let cool slightly, then cut the baked dough into strips. Serve the cheesy breadsticks warm for the best flavor and texture.
Notes
- Using sourdough discard adds a slightly tangy flavor while reducing waste.
- Ensure water is warm, not hot, to activate yeast properly without killing it.
- Feel free to add your favorite herbs like rosemary or thyme for extra flavor.
- For crispier breadsticks, bake a few minutes longer but watch closely to prevent burning.
- These breadsticks are best enjoyed fresh but can be reheated in the oven for a few minutes to regain crispness.
