Instructions
- Cook the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and diced red bell pepper, cooking until they soften and become fragrant, about 3 minutes.
- Scramble the Eggs: Pour the beaten eggs into the skillet. Let them sit for a moment until starting to set on the bottom, then gently fold and scramble them with a spatula until just cooked through but still moist.
- Add Beans, Corn, and Sauce: Stir in the drained black beans and corn kernels, cooking until warmed through. Mix in the BBQ sauce and taco spice blend carefully to combine all flavors evenly.
- Assemble the Burritos: Lay out the whole wheat tortillas. Spoon the egg mixture evenly onto each tortilla. Add optional shredded cheddar cheese, cooked bacon, or salsa if desired. Fold the sides over and roll tightly to form burritos.
