For the Spicy Turkey Cauliflower Rice:
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced (optional for extra heat)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cauliflower rice (fresh or frozen)
- 2 tablespoons tomato paste
- 2 tablespoons low-sodium soy sauce or coconut aminos
- juice of 1/2 lime
- chopped fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Add the onion, garlic, red bell pepper, and jalapeño (if using), and sauté for 3–4 minutes until softened.
- Stir in the chili powder, cumin, smoked paprika, red pepper flakes, salt, and black pepper. Mix well to coat the turkey and vegetables evenly with the spices.
- Add the cauliflower rice, tomato paste, and soy sauce. Stir to combine and cook for another 5–7 minutes, until the cauliflower rice is tender and most of the moisture has evaporated.
- Squeeze lime juice over the dish and stir. Taste and adjust seasoning if needed. Garnish with chopped cilantro before serving.
Notes
- Use pre-riced cauliflower for quicker prep.
- Add a fried egg on top for extra protein.
- For a lower-sodium option, choose coconut aminos or reduced-sodium soy sauce.
