Ingredients
Scale
Vegetables & Extras
- 2 cups Spinach (fresh or frozen)
- 1/4 cup Sun-Dried Tomatoes (chopped)
- 1/4 cup Olives (sliced)
Dairy & Bread
- 1 cup Feta Cheese (crumbled, use vegan feta for plant-based option)
- 4 slices Bread (sourdough or whole grain)
Fats
- 2 tablespoons Butter (or olive oil as an alternative)
Instructions
- Prepare the Filling: In a medium bowl, combine the fresh or thawed spinach, crumbled feta cheese, chopped sun-dried tomatoes, and sliced olives. Mix well until all ingredients are evenly distributed.
- Butter the Bread: Spread butter evenly on one side of each bread slice. If using olive oil instead, brush it lightly on the bread slices to help achieve a golden crust.
- Assemble the Sandwich: Place two slices of bread, buttered side down, on a clean surface. Evenly distribute the spinach and feta mixture onto each slice, then top with the remaining bread slices, buttered side up.
- Cook the Sandwich: Heat a skillet or frying pan over medium heat. Place the sandwiches in the pan and cook for about 2–3 minutes on each side, or until the bread is golden brown and crisp and the cheese starts to melt.
- Serve: Remove the grilled cheese sandwiches from the pan, let them cool slightly, then slice in half and serve warm for the best flavor and texture.
Notes
- If using frozen spinach, make sure to thaw and squeeze out excess water before mixing.
- To make this recipe vegan, substitute feta with vegan cheese and use olive oil instead of butter.
- For extra crispiness, press the sandwich gently with a spatula while cooking.
- Adding a pinch of black pepper or dried oregano to the filling can enhance the flavor further.
