Description

These Spinach Puffs are delightful puff pastry appetizers filled with a savory mixture of spinach, ricotta, and Parmesan cheese. They are perfect for parties or as a tasty snack.

Puff Pastry:

  • 1 sheet puff pastry, thawed

Filling:

  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 5 oz fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté onion: In a skillet over medium heat, warm olive oil and sauté the chopped onion until soft, about 3 minutes. Add garlic and cook for another 30 seconds.
  3. Add spinach: Stir in the chopped spinach and cook until wilted (or heated through if using frozen). Remove from heat and let cool slightly.
  4. Mix filling: In a bowl, combine the spinach mixture with ricotta, Parmesan, nutmeg, salt, and pepper.
  5. Prepare puff pastry: Roll out the puff pastry on a lightly floured surface and cut into 9 squares. Place about 1 tablespoon of the filling in the center of each square. Fold over into triangles and press edges with a fork to seal.
  6. Brush with egg wash: Brush tops with beaten egg.
  7. Bake: Bake for 15–18 minutes or until golden and puffy. Let cool slightly before serving.

Notes

  • You can substitute feta cheese for ricotta for a tangier flavor.
  • These are great served warm or at room temperature and can be prepped ahead and baked just before serving.
