Chocolate Pudding Layer
- 3.9 ounce instant chocolate pudding mix
- 2 cups milk
Mint Vanilla Pudding Layer
- 3.9 ounce instant vanilla pudding mix
- 2 cups heavy cream
- ½ teaspoon vanilla extract (or mint extract, depending on taste)
- Green food coloring (to desired color)
Toppings and Garnish
- 8 Oreo cookies (any cream-filled chocolate cookies)
- 8 oz whipped topping
- Chocolate gold coin for decoration
Instructions
- Prepare Chocolate Pudding: Pour 2 cups of milk into a medium bowl. Add the instant chocolate pudding mix and use a hand mixer to combine on low speed for 2 minutes. Place the pudding in the refrigerator for 5 minutes to set.
- Prepare Mint Vanilla Pudding: In a separate bowl, pour 2 cups heavy cream and add the instant vanilla pudding mix. Beat together at low speed, then gradually increase to high speed until light and fluffy. Mix in vanilla extract (or mint extract) and green food coloring until the desired shade is achieved.
- Layer the Parfaits: In each of the 4 cups, start with a thick layer of chocolate pudding, followed by a layer of the green vanilla pudding. Add a layer of crumbled Oreo cookies, then a layer of whipped topping. Finish with a large dollop of the green vanilla pudding on top.
- Decorate: Garnish each parfait with a chocolate gold coin and sprinkle Oreo crumbs on top for a festive touch.
- Chill and Serve: Place the parfaits in the fridge to chill thoroughly. Serve cold for best taste and texture.
