Chocolate Pudding Layer

  • 3.9 ounces instant chocolate pudding mix
  • 2 cups milk

Green Vanilla Pudding Layer

  • 3.9 ounces instant vanilla pudding mix
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract or mint extract (depending on taste)
  • Green food coloring, to desired color

Additional Ingredients

  • 8 Oreo cookies (or any cream-filled chocolate cookies)
  • 8 ounces whipped topping
  • Chocolate gold coins for decoration (optional)


Instructions

  1. Prepare Chocolate Pudding: Pour 2 cups of milk into a medium bowl then add the instant chocolate pudding mix. Use a hand mixer to combine on low speed for 2 minutes. Place the pudding in the refrigerator for 5 minutes to set up.
  2. Prepare Green Vanilla Pudding: In a separate bowl, pour in 2 cups of heavy cream and add the instant vanilla pudding mix. Beat on low speed initially, then increase speed until the mixture becomes light and fluffy. Add ½ teaspoon vanilla or mint extract and green food coloring to achieve the desired shade.
  3. Assemble Parfaits: In each of the 4 serving cups, layer a thick portion of the chocolate pudding, followed by a layer of the green whipped vanilla pudding. Next, sprinkle a layer of crumbled Oreo cookies, then add a layer of whipped topping.
  4. Finish and Garnish: Top each parfait with a large dollop of the green whipped pudding. Decorate with chocolate gold coins and more Oreo crumbs as desired.
  5. Chill and Serve: Place the parfaits in the refrigerator and serve chilled for best flavor and texture.

Notes

  • Use heavy cream for the vanilla pudding layer to achieve a light and fluffy texture; milk will not provide the same consistency.
