Description

Celebrate St. Patrick’s Day with these festive and delightful pudding parfaits featuring layers of rich chocolate pudding, creamy green vanilla pudding, Oreo cookie crumbles, and fluffy whipped topping. Perfectly chilled and garnished with chocolate coins for a fun and tasty holiday treat.

Ingredients

Scale

Chocolate Pudding

  • 3.9 ounces instant chocolate pudding mix
  • 2 cups milk

Vanilla Pudding Mixture

  • 3.9 ounces instant vanilla pudding mix
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract (or mint extract, based on preference)
  • Green food coloring (to desired shade)

Additional Ingredients

  • 8 Oreo cookies (any cream-filled chocolate cookies)
  • 8 ounces whipped topping
  • Chocolate gold coins (for decoration)

Instructions

  1. Prepare Chocolate Pudding: Pour 2 cups of milk into a medium bowl and add the chocolate pudding mix. Using a hand mixer, beat the mixture on low speed for 2 minutes until combined. Refrigerate for 5 minutes to allow it to set.
  2. Prepare Green Vanilla Pudding: In a separate bowl, combine 2 cups of heavy cream with the vanilla pudding mix. Begin at low speed using a hand mixer, then increase speed gradually until the mixture becomes light and fluffy. Beat in ½ teaspoon vanilla extract and enough green food coloring to achieve the desired color.
  3. Assemble Parfaits: In each of the 4 serving cups, layer a thick portion of chocolate pudding first, followed by a layer of the green vanilla pudding. Next, add a layer of crumbled Oreo cookies, then a layer of whipped topping. Finally, top each parfait with a generous dollop of the green vanilla pudding.
  4. Decorate: Garnish each parfait with a chocolate gold coin and sprinkle with additional Oreo crumbs for a festive touch.
  5. Chill and Serve: Place the parfaits in the refrigerator to chill before serving. Enjoy these delicious pudding parfaits cold for the best flavor and texture.

Notes

  • You can substitute mint extract for vanilla extract to enhance the festive flavor.
  • Adjust the amount of green food coloring based on your desired color intensity.
  • For a dairy-free version, consider using non-dairy milk, cream alternatives, and vegan whipped topping, but pudding mixes should be verified for compatibility.
  • Prepare the parfaits a few hours in advance to allow flavors to meld.
  • Use a clear glass or cup to showcase the colorful layers attractively.
