Instructions
- Blend Strawberries: In a blender or food processor, blend the strawberries and granulated sugar (or honey) until smooth.
- Strain Puree (Optional): Strain the puree through a fine-mesh sieve to remove seeds for a silkier texture.
- Mix Cream and Sweetener: In a large mixing bowl, combine chilled heavy whipping cream, powdered sugar (if using), and vanilla extract.
- Whip Cream: Using an electric mixer, whip on medium-high speed until soft peaks form.
- Combine Puree and Whipped Cream: Gently fold the strawberry puree into the whipped cream, being careful not to deflate the mixture.
- Mix Until Fluffy: Mix until well combined and fluffy.
- Portion Mousse: Spoon the mousse into serving glasses or bowls.
- Chill: Refrigerate for at least 2 hours to allow it to set.
