Description

Enjoy an elegant surf and turf dinner featuring succulent lamb chops perfectly seared and served over creamy lobster mashed potatoes, accompanied by tender-roasted asparagus with a hint of lemon. This sophisticated yet approachable dish combines rich flavors and textures for a memorable meal.

Ingredients

Scale

Lamb Chops

  • 8 lamb chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 tablespoon butter (for searing)

Lobster Mashed Potatoes

  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1 cup cooked lobster meat, chopped
  • Salt and pepper, to taste

Asparagus

  • 1 bunch fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Juice of 1/2 lemon

Instructions

  1. Season the Lamb Chops: Pat lamb chops dry and season both sides with salt, pepper, rosemary, thyme, and minced garlic. Allow them to rest at room temperature for 15 minutes to enhance flavor absorption.
  2. Sear the Lamb Chops: Heat olive oil and butter in a large skillet over medium-high heat. Sear the lamb chops for 3 to 4 minutes per side until they achieve medium-rare doneness or your preferred level. Remove from pan and let them rest for 5 minutes to retain juiciness.
  3. Prepare the Mashed Potatoes: Boil the peeled and cubed Yukon gold potatoes in salted water for 15 to 20 minutes until fork-tender. Drain well and return potatoes to the pot. Add butter, heavy cream, and milk, then mash until smooth and creamy. Gently fold in the chopped cooked lobster meat, seasoning with salt and pepper to taste.
  4. Roast the Asparagus: Toss trimmed asparagus spears with olive oil, salt, and pepper. Roast in a preheated 400°F (200°C) oven for 10 to 12 minutes, until tender-crisp. Finish by squeezing fresh lemon juice over the top for brightness.
  5. Plate and Serve: On each plate, spread a generous scoop of lobster mashed potatoes. Top with two rested lamb chops and serve alongside the roasted asparagus for a beautiful and balanced meal.

Notes

  • For a budget-friendly alternative, substitute lobster meat with crab meat in the mashed potatoes.
  • Lamb chops may be grilled instead of pan-seared for a smoky flavor.
  • Consider adding a drizzle of balsamic glaze or a pan sauce over the lamb chops for extra depth of flavor.
