Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, brown 1 pound of lean ground beef until fully cooked, breaking it up as it cooks. Drain excess fat if necessary.
  2. Add Taco Seasoning: Stir in 1 packet of taco seasoning to the cooked beef, adding a small amount of water as per seasoning packet instructions, then simmer for a few minutes to allow flavors to meld.
  3. Prepare Pasta and Beans: Cook rotini pasta according to package directions, rinse under cold water to cool, and drain well. Drain and rinse 1 can of chili beans to reduce excess sauce if desired.
  4. Combine Salad Ingredients: In a large mixing bowl, combine the cooked pasta, seasoned ground beef, chili beans, halved cherry tomatoes, shredded Mexican cheese, shredded iceberg lettuce, and sliced green onions.
  5. Add Dressing: Pour 1 1/2 cups of French dressing over the mixed ingredients and toss thoroughly to ensure everything is evenly coated.
