Description

For the Dressing

  • 3 Tbsp. tahini
  • 2 Tbsp. olive oil
  • 2 Tbsp. pure maple syrup
  • ½ lemon (juice and zest)
  • 1 Tbsp. apple cider vinegar (or rice vinegar)
  • 1 clove garlic (crushed)
  • ¼ tsp. ginger (minced)
  • 2-3 Tbsp. water (to thin out dressing)


Instructions

  1. Combine Ingredients: Add all ingredients except the water into a high-speed blender or food processor and blend for 20-30 seconds until the mixture is smooth and creamy. If you don’t have a blender, you can whisk all the ingredients together in a bowl or shake in a mason jar to combine well.
  2. Adjust Consistency: Gradually add water, one tablespoon at a time, mixing after each addition until the dressing reaches your desired thickness and pourability.
  3. Store and Serve: Transfer the dressing to an airtight container and refrigerate. It will keep fresh for 1-2 weeks. Use it to enhance salads, bowls, or as a delicious dip.

Notes

  • You can substitute rice vinegar for apple cider vinegar if preferred.
  • Adjust the amount of maple syrup to make the dressing more or less sweet.
  • Keep the dressing refrigerated to maintain freshness and extend shelf life.
  • For a spicier kick, add a pinch of cayenne pepper or chili flakes.
  • Use water sparingly to avoid overly thinning out the dressing.
