Description

Soup:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon sugar
  • 1 can (28 oz) whole peeled tomatoes
  • 2 cups vegetable broth
  • ½ cup heavy cream
  • Salt and black pepper, to taste

Toast:

  • 4 slices crusty bread
  • 1 cup shredded sharp cheddar cheese
  • ½ small red onion, thinly sliced
  • 1 tablespoon butter, softened


Instructions

  1. Soup: Heat olive oil in a large pot, sauté onion until softened. Add garlic, tomato paste, oregano, and sugar. Pour in tomatoes and broth, simmer for 15–20 minutes. Blend until smooth, stir in cream, season with salt and pepper.
  2. Toast: Preheat broiler. Butter one side of bread slices, top with cheese and onion. Broil for 2–4 minutes until cheese melts. Serve hot with soup.

Notes

  • For a vegan version, use coconut cream and plant-based cheese. Add red pepper flakes for spice. Goes well with grilled cheese or salads.
