Crust
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar

- 1 cup crushed pineapple (well-drained)

- 1/3 cup shredded sweetened coconut
- 1/2 teaspoon vanilla extract

Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal of the bars.
- Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly moistened. Press the mixture firmly and evenly into the bottom of the prepared pan to form a solid crust layer.
- Prepare the Filling: In another bowl, stir together the sweetened condensed milk, well-drained crushed pineapple, white chocolate chips, shredded coconut, vanilla extract, and a pinch of salt until the mixture is well combined.
- Assemble and Bake: Pour the pineapple filling mixture over the crust layer and spread it out evenly. Optionally, sprinkle extra shredded coconut or pineapple bits on top for added texture and decoration. Bake in the preheated oven for 25–28 minutes, or until the edges turn lightly golden and the center is set.
- Cool and Chill: Remove the bars from the oven and allow them to cool completely in the pan at room temperature. Once cooled, refrigerate the bars for at least 1 hour to set properly before slicing into 16 squares.
- Serve: Serve the bars chilled for the best texture and the full tropical flavor experience. Store any leftovers in the refrigerator for up to 5 days.
