Turkey Taco Filling:
- 1 tablespoon olive oil
- 1 lb lean ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1/4 cup water
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
For Serving (Optional):
- Chopped cilantro
- Avocado slices
- Sour cream
- Lime wedges
Instructions
- Preheat oven to 400°F: Scrub the sweet potatoes, pierce with a fork, and bake for 45–50 minutes until fork-tender.
- Prepare the Turkey Taco Filling: Cook onion in olive oil until softened. Add garlic, turkey, taco seasoning, and water. Simmer until thickened. Add black beans and corn, season, and heat through.
- Stuff the Sweet Potatoes: Cut a slit in each sweet potato, mash the inside, stuff with turkey mixture, and top with cheese. Bake for 5 minutes to melt the cheese.
- Serve: Garnish with avocado, sour cream, cilantro, and lime wedges.
