Sweet Potatoes:

  • 4 medium sweet potatoes

Turkey Taco Filling:

  • 1 tablespoon olive oil
  • 1 lb lean ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

For Serving (Optional):

  • Chopped cilantro
  • Avocado slices
  • Sour cream
  • Lime wedges


Instructions

  1. Preheat oven to 400°F: Scrub the sweet potatoes, pierce with a fork, and bake for 45–50 minutes until fork-tender.
  2. Prepare the Turkey Taco Filling: Cook onion in olive oil until softened. Add garlic, turkey, taco seasoning, and water. Simmer until thickened. Add black beans and corn, season, and heat through.
  3. Stuff the Sweet Potatoes: Cut a slit in each sweet potato, mash the inside, stuff with turkey mixture, and top with cheese. Bake for 5 minutes to melt the cheese.
  4. Serve: Garnish with avocado, sour cream, cilantro, and lime wedges.
