Description

  • 16 chocolate Oreo cookies, creme removed

  • ¼ cup unsalted butter, melted

Cheesecake Filling

  • 2 – 8 oz cream cheese, softened
  • 1 cup sugar
  • ½ cup sour cream
  • ¾ tsp pure vanilla extract
  • â…› tsp kosher salt
  • 2 large eggs
  • 10 Oreos, chopped into small pieces

Toppings

  • 1 package mini Oreos
  • 1 ½ cups confetti heart sprinkles
  • 1 ½ cups heavy whipping cream
  • ¼ cup powdered sugar


Instructions

  1. Prepare the Pan: Line a cupcake pan with cupcake liners to ensure the cheesecake bites don’t stick and come out easily.
  2. Make the Crust: Crush the 16 chocolate Oreos (with creme removed) into fine crumbles using a food processor or by placing them in a ziplock bag and crushing with a rolling pin. Transfer the crumbs to a medium bowl.
  3. Combine Crust Ingredients: Add melted butter and 3 tablespoons of sugar to the crushed cookie crumbs. Mix well until the mixture resembles wet sand.
  4. Form Crust in Cups: Scoop about 1 tablespoon of the crust mixture into each cupcake liner, then press down firmly with the flat bottom of a cup or glass to form a compact and even crust base.
  5. Prepare Cheesecake Batter: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add 1 cup sugar, sour cream, vanilla extract, and kosher salt, mixing well after each addition. Beat in the eggs one at a time until fully incorporated.
  6. Add Chopped Oreos: Gently fold the chopped Oreos into the cheesecake batter to distribute evenly without overmixing.
  7. Fill the Cups: Spoon the cheesecake batter over each crust in the cupcake liners, filling almost to the top.
