- 1 teaspoon rum extract
- 1 teaspoon molasses (optional)
- 10 ounces frozen pineapple, chopped (about 3 cups)
Garnishes
- Maraschino cherries (optional)
- Fresh chopped pineapple (optional)
- Parasol picks (optional)
- Straws (optional)
- Pineapple wedges (optional)
Instructions
- Prepare Cream of Coconut: If making the homemade cream of coconut, prepare it first as per the recipe in the notes and allow it to cool completely before starting the main recipe.
- Combine Ingredients: In a blender, add 1 cup of cream of coconut, 3/4 cup pineapple juice, 2 tablespoons fresh lime juice, 1 teaspoon rum extract, 1 teaspoon molasses (if using), and 10 ounces of frozen chopped pineapple (about 3 cups).
- Blend Smooth: Blend the mixture on high speed until completely smooth, approximately 1 minute, ensuring all frozen fruit is well incorporated.
- Freeze Mixture: Transfer the blended mixture into a container with a lid and freeze for 45 minutes to 1 hour until it reaches a partially frozen, slushy consistency.
- Final Blend: Remove the partially frozen mixture and return it to the blender. Blend again for just a few seconds until smooth and creamy.
- Serve and Garnish: Pour the virgin Piña Colada into glasses and garnish with maraschino cherries, fresh chopped pineapple, parasol picks, straws, and pineapple wedges as desired. Serve immediately to enjoy the best texture.
Notes
- Homemade Cream of Coconut: To make cream of coconut, blend equal parts coconut milk and sugar, simmering briefly to dissolve sugar if needed, then cool completely.
- Freezing time is essential to achieve the ideal slushy texture.
- Molasses is optional and adds a deeper flavor note, omit if a lighter taste is preferred.
- This recipe is non-alcoholic and perfect for all ages.
- For a thicker consistency, freeze longer but avoid fully solid ice formation.
